I think that might work. I found this recipe for wing sauce that looks good: -chicken-wing-sauce/But I've never done it that way and I wonder if the sauce might separate a bit during cooking making it seem more greasy? Just a guess though. Who knows, it might be way BETTER with homemade buffalo wing sauce!
Yes! I've actually been thinking that when I make it again that is what I will do. First, that would be easier, which is always a good thing. ? And second, the rotisserie chicken will be tastier than just basic baked or boiled chicken. So I think this is actually how I will make this recipe in the future.

What I would do instead would be to get a gluten free penne or other similar pasta, cook the noodles according to package directions, mix with the buffalo chicken mixture and then bake in a casserole dish with cheese sprinkled over the top.
